22/03/2016 Asparagus with a spinach frittata and mackerel


It’s that time of the year again, asparagus! Well i eat them the whole year, but in Holland this time of the year they are the best!

Ingredients for the frittata
5 eggs
3 spring onions
1 big hand spinach
about 8 basil leaves (left a few on the side for topping)
some salt and pepper

On the side

Preheat the oven on 200 degrees celsius. Beat the eggs with salt and pepper. put the spinach in the food processor, cut till you have little pieces. slice the spring onions and scoop them together with the spinach trough the eggs.
Oil a backing tray and pour the egg mixture in it. then put in in the oven for 15 minutes.

Get some green asparagus and cook them for 10 minutes, make sure you don’t cook them to long.

Put some frittata on a plate, top it with some mackerel and basil with the asparagus on the side.
Enjoy your meal.
